  • 2 cups - tomato juice
  • 1 tbsp - red vinegar
  • 2 tbsp - fresh basil Or 2 tsp -dried basil
  • a little pepper and salt
  • 2 tbsp - plain yoghurt

How to Make Quick n Easy Tomato Soup

  • Pour all the ingredients, except yogurt, into a pan and heat through slowly, simmering, for a minute or two to soften up the basil (if dried).
  • Serve hot or cold, stirring in the yogurt just before serving.
