Ingredients

  • 3 medium gourds, peeled and chopped big
  • 2 green chillies, finely chopped
  • 1/4 tsp - grated Ginger
  • 1 tsp - crushed groundnuts
  • 2-3 tiny Tamarind bits
  • 1/4 tsp - cumin & Mustard Seeds mixed
  • 4 -5 pinches Turmeric powder
  • salt to taste
  • 2 pinches Asafoetida
  • 1 tbsp - oil
  • 1/4 tsp - black maharashtrian masala (refer) (optional)

How to Make Quick Ridge Gourd or Zucchini

  • Wash chopped gourd and drain.
  • Heat oil in a pan, add seeds allow to splutter.
  • Add asafoetida, green chillies and ginger.
  • Stir, add chopped gourd.
  • Add tamarind bits, turmeric powder and salt.
  • Cover and simmer till gourd is tender.
  • Add crushed groundnuts and masala.
  • Stir for a minute, and take off fire.
  • Serve hot with chapati or steamed rice.
