  • 2 bunches - Spring onions greens with bulbs
  • 1/2 tsp - Red Chilli powder
  • 1/2 tsp - Coriander seed (dhania) powder
  • 1/4 tsp - Turmeric powder
  • 1/4 tsp - dried Mango (turmeric) powder
  • 1/2 tsp - each cumin and Mustard Seeds
  • 2 to 3 pinches - Asafoetida powder
  • 1 tbsp - oil
  • Salt to taste
  • How to Make Quick Spring Onion Stir Fry:

    1. Chop spring onion greens, with onions. Sprinkle all dry masalas over them, mix with hand.
    2. Keep aside, till required.
    3. Heat oil in a pan, when warmed, add seeds, asafoetida.
    4. Allow to splutter, add spring onions.
    5. Cover, allow to steam in for a minute.
    6. Remove lid, mix well, allow to simmer over reduced heat.
    7. Cook till all moisture evaporates and oil starts to separate.
    8. Take off fire. Serve piping hot with phulkas, puris or steamed rice.
