Ingredients

  • Small Brinjals - 1/2 kg
  • Turmeric powder - 1/2 tsp
  • Tomato - 1
  • Oil - 1 tbsp
  • Mustard - 1/2 tsp
  • Filling:
  • Groundnuts - 100 gm (fried ones)
  • Turmeric powder - 1 tsp
  • Chilli powder - 1.5 tsp
  • Salt - to taste
  • How to Make Quick Stuffed Brinjal:

    1. Wash and clean the brinjals and retain the calyx part and cut the brinjal into four segments, half way through.
    2. Powder the ingredients coarsely.
    3. Stuff the powder into the brinjal.
    4. Heat a kadai and pour oil, splutter mustard.
    5. Add brinjals and turmeric powder and cook on medium heat.
    6. When the brinjal is nearly cooked, add chopped tomatoes and let it cook till the curry is done.
    7. Serve.
