Ingredients

  • 2 cups - leftover rice or freshly cooked rice (long grained)
  • 2 tbsp - mint chutney
  • 1 tbsp - tomato paste
  • 1 - onion
  • 1 cup - mixed vegetables, cut lengthwise (carrot, beans, cabbage, cauliflower)
  • 1 - potato
  • 1/2 cup - peas
  • 1/4 tsp - cumin seeds
  • a few bay leaves
  • a few big cardamoms
  • 1 tbsp - oil
  • 1 tsp - garam masala/biryani masala
  • 1/2 tsp - turmeric powder
  • 1/4 cup - water
  • salt to taste
  • mint or coriander leaves for garnishing

How to Make Quick Vegetable Biryani

  • Cook the required amount of rice or use any leftover rice.
  • Heat oil in a pan, add the cumin seeds, bay leaves and cardamom.
  • Add finely chopped onions and fry.
  • Add mint chutney, tomato paste, garam masala, turmeric, the cup full of vegetables, potatoes and peas.
  • Add 1/4 cup of water and cook on low flame.
  • Add the rice and salt and mix well.
  • Garnish with mint or coriander leaves.
  • Serve hot with raita or dal.
