Ingredients

  • 2 cups - leftover Rice or freshly cooked Rice (long grained)
  • 2 tbsp - Mint chutney
  • 1 tbsp - Tomato paste
  • 1 - Onion
  • 1 cup - mixed vegetables, cut lengthwise (carrot, beans, cabbage, cauliflower)
  • 1 - Potato
  • 1/2 cup - peas
  • 1/4 tsp - Cumin seeds
  • a few Bay Leaves
  • a few big Cardamoms
  • 1 tbsp - oil
  • 1 tsp - garam masala/biryani masala
  • 1/2 tsp - Turmeric powder
  • 1/4 cup - water
  • salt to taste
  • Mint or Coriander leaves for garnishing
  • How to Make Quick Vegetable Biryani:

    1. Cook the required amount of rice or use any leftover rice.
    2. Heat oil in a pan, add the cumin seeds, bay leaves and cardamom.
    3. Add finely chopped onions and fry.
    4. Add mint chutney, tomato paste, garam masala, turmeric, the cup full of vegetables, potatoes and peas.
    5. Add 1/4 cup of water and cook on low flame.
    6. Add the rice and salt and mix well.
    7. Garnish with mint or coriander leaves.
    8. Serve hot with raita or dal.
