Ingredients

  • 1 cup - cooked rice
  • 1 tsp - oil
  • 2 - onions
  • 2 - tomatoes
  • 1 - capsicum
  • 1 stalk - curry leaves
  • 1 bunch - coriander
  • 2 tsps - grated coconut
  • 1 - grated carrot
  • 3 - green chillies
  • 1 inch - piece ginger
  • 1 tsp - mustard
  • 1 tsp - urad dal
  • 1 tsp - channa dal
  • 1 tsp - turmeric powder
  • Salt to taste

How to Make Quick Vegetable Rice

  • Splutter mustard seeds in oil and then fry dal till it turns golden brown.
  • Add curry leaves, green chillies and ginger.
  • Saute onions with turmeric powder, salt and later add chopped tomatoes, capsicum and saute till dry.
  • Garnish with coriander leaves, grated coconut and carrot.
  • Stir well and add the rice.
