  • 1/4 cup - Toor Dal
  • 1/4 cup - Moong dal
  • 1/4 cup - Masoor dal
  • 2 cups - Chopped mixed vegetables (carrot, turnips, eggplants, bell peppers and potatoes)
  • 1 - Tomato (chopped)
  • 1 tbsp - Sambhar powder
  • 1/2 tsp - Red Chilli powder
  • 1 tbsp - Lemon juice
  • 1 tsp - Mustard seeds, urad dal, Cumin seeds
  • 2 - Dry Red Chillies
  • A few Curry leaves
  • 1/4 tsp - Asafoetida powder
  • Salt - to taste
  • Oil - as per need
  • How to Make Quick Vegetable Sambhar:

    1. Wash the dals together and transfer it to the pressure cooker.
    2. Add the mixed vegetables, tomato, sambar powder, chilli powder, turmeric powder and salt to the dals.
    3. Add 3 cups of water and pressure cook it till you hear three whistles.
    4. Once the steam gets released, mash the prepared sambar slightly with a spoon and keep aside.
    5. Meanwhile, heat enough oil in a pan and let the mustard seeds, urad dal, cumin seeds and asafoetida powder splutter.
    6. Add the dry red chillies and curry leaves. Fry it until they turn brown.
    7. Now, add tempered spices, lemon juice to the sambar and give a stir.
    8. Serve hot with rice.
