Ingredients

  • 1/4 cup - Toor dal
  • 1/4 cup - Moong dal
  • 1/4 cup - Masoor dal
  • 2 cups - Chopped mixed vegetables (carrot, turnips, eggplants, bell peppers and potatoes)
  • 1 - Tomato (chopped)
  • 1 tbsp - Sambhar powder
  • 1/2 tsp - Red chilli powder
  • 1 tbsp - Lemon juice
  • 1 tsp - Mustard seeds, urad dal, cumin seeds
  • 2 - Dry red chillies
  • A few curry leaves
  • 1/4 tsp - Asafoetida powder
  • Salt - to taste
  • Oil - as per need

How to Make Quick Vegetable Sambhar

  • Wash the dals together and transfer it to the pressure cooker.
  • Add the mixed vegetables, tomato, sambar powder, chilli powder, turmeric powder and salt to the dals.
  • Add 3 cups of water and pressure cook it till you hear three whistles.
  • Once the steam gets released, mash the prepared sambar slightly with a spoon and keep aside.
  • Meanwhile, heat enough oil in a pan and let the mustard seeds, urad dal, cumin seeds and asafoetida powder splutter.
  • Add the dry red chillies and curry leaves. Fry it until they turn brown.
  • Now, add tempered spices, lemon juice to the sambar and give a stir.
  • Serve hot with rice.
