Ingredients

  • Basmati Rice - 2 cups
  • Turmeric powder - 1/2 tbsp
  • Coriander powder - 1/2 tbsp
  • Cumin powder - 1/2 tbsp
  • Pepper powder - 1/2 tbsp
  • Black Mustard Seeds - 1/2 tbsp
  • A handful of Curry leaves
  • Green chillies - 6
  • Garlic powder - 1/4 tbsp
  • 1 - Garlic Clove chopped
  • A pinch of Asafoetida
  • Salt to taste
  • Ghee
  • How to Make Raat Bhaat:

    1. Heat ghee in a pan and add coriander, cumin, black pepper powder, mustard seeds and half of the curry leaves.
    2. Add green chillies and asafoetida. Fry for 2 mins.
    3. Add rice. Fry for 2 mins.
    4. Mix turmeric and garlic powder with 4 cups of water. Add to the rice. Cook until done.
    5. Heat ghee. Fry rest of the curry leaves. Add it to the cooked rice and mix well.
    6. Add salt and let it rest covered for 5 mins.
    7. Serve hot.
