Ingredients

  • Basmati rice - 2 cups
  • Turmeric powder - 1/2 tbsp
  • Coriander powder - 1/2 tbsp
  • Cumin powder - 1/2 tbsp
  • Pepper powder - 1/2 tbsp
  • Black mustard seeds - 1/2 tbsp
  • A handful of curry leaves
  • Green chillies - 6
  • Garlic powder - 1/4 tbsp
  • 1 - garlic clove chopped
  • A pinch of asafoetida
  • Salt to taste
  • Ghee

How to Make Raat Bhaat

  • Heat ghee in a pan and add coriander, cumin, black pepper powder, mustard seeds and half of the curry leaves.
  • Add green chillies and asafoetida. Fry for 2 mins.
  • Add rice. Fry for 2 mins.
  • Mix turmeric and garlic powder with 4 cups of water. Add to the rice. Cook until done.
  • Heat ghee. Fry rest of the curry leaves. Add it to the cooked rice and mix well.
  • Add salt and let it rest covered for 5 mins.
  • Serve hot.
