  • 80g - Wheat flour or all - purpose flour
  • 40g - Ragi flour
  • 1 -egg
  • 1 - banana, medium sized (mashed)
  • 1.5 tsp - baking powder
  • 1/4 tsp - bicarbonate of soda
  • 50g - Jaggery or Sugar
  • 1 tsp - vanilla essence
  • 1/4 tsp - grated Nutmeg
  • 60 ml - Milk
  • 30 ml - sunflower oil/olive oil
  • 6 - Walnuts
  • How to Make Ragi and Banana Muffin:

    1. Mix all the wet ingredients together in a large bowl.
    2. Sift the dry ingredients in a bowl except sugar.
    3. Mix the dry ingredients into wet ingredients along with sugar. Don't over mix it, just gently fold twice or thrice.
    4. Preheat the oven to 180 degree Celsius. Line the muffin tin with paper cases.
    5. Spoon the mixture into the paper cases. Break the walnuts roughly and sprinkle on top of the mixture.
    6. Bake it in the preheated oven 15 to 20 minutes or until the top of the muffin looks firm.
    7. Take it out from the oven, leave it cool down in a wire rack for 5 minutes. Remove it from the tin and serve it while they are still warm.
