Ingredients

  • 6 - medium peaches or nectarines, peeled, pitted and sliced
  • 3 tbsps - lemon juice
  • 1/2 cup - water
  • 3 tbsps - sugar
  • 1 tbsp - cornstarch
  • A pinch of ground cinnamon
  • 2 - cloves
  • 1 - banana, sliced
  • 1/2 kg - plums, pitted and quartered
  • 1 cup - seedless green grapes, halved
  • 1.5 cups - blueberries

How to Make Rainbow Fruit Bowl

  • Toss half of the peaches with 1 tbsp of lemon juice. Set aside.
  • In a microwave safe casserole combine remaining sliced peaches, water, and 1 tbsp of lemon juice.
  • Cook, covered, on high for 3 to 5 mins or till very tender, stirring twice.
  • Do not drain juice in casserole.
  • In a blender or food processor, blend peaches and the juice till smooth. Return to casserole.
  • In a small mixing bowl, combine sugar, corn-starch, cinnamon and cloves. Add to casserole.
  • Cook uncovered on high for 2 to 3 mins or till thickened and bubbly. Stir every 30 secs.
  • Cook uncovered on high for 1 min more.
  • Cool. Toss banana with remaining lemon juice.
  • Layer fruits in a glass bowl, using half of the remaining peaches, all of the plums and all the grapes.
  • Alternate bananas and strawberries on top.
  • Continue layering remaining peaches and all the blueberries.
  • Spoon peach sauce when done layering.
  • Chill and serve.
