Cream the butter and sugar till light and fluffy.Add the egg and continue beating till well blended. Sift the flour with salt and add it to the creamed mixture along with raisins,walnuts,vanilla essence and coconut.Mix well. Place teaspoonfuls of this cookie mixture on a greased baking tray/cookie sheet.
Bake at 350 degree F(175 deg Celsius) for 10-12 mins or until golden brown on top. Note: You can substitute egg with banana. 1 ripe banana = 1 egg. You can use nuts of your choice, pecans is another delicious choice.
