Ingredients

  • 3 cups - Carrots, cut into pieces
  • 3 cups - Cauliflower, cut into florets
  • 2.5 tsp - Red chili powder
  • 1 tsp - Turmeric powder
  • 5 tbsp - Mustard, powdered
  • 1 tsp - Mustard Seed
  • 1 tsp - Oil
  • Salt to taste

How to Make Raiwala Achaar

  • Boil 2 litres of water
  • Add the vegetables and remove from heat after 2 minutes.
  • Drain water after 2 minutes.
  • Lay the vegetables on a towel to dry for an hour.
  • In a bowl, mix the powdered spices.
  • Add vegetables to the spices and mix well.
  • Heat oil and splutter the mustard seeds, add to the vegetables.
  • Leave in the bowl for 8 hours stirring occasionally 2-3 times.
  • Let it mature in a jar for 4-5 days.
