  • 2 tbsp cooking oil
  • 1 big onion
  • 2 tbsp lime juice
  • 4 tsp curry powder
  • 1 cup chicken broth
  • 200gm boneless chicken
  • 2.5 tsp ground ginger
  • 1 small green pepper (chopped)
  • 1 heaped tsp corn starch
  • Coriander to garnish
  • Salt to taste

How to Make Raj Chicken

  • Cut chicken into sma;ll pieces and marinate with 1.5 tsp ginger and oil Heat oil and fry thinly sliced onions till brown
  • Put in marinated chicken and fry till golden
  • Put in curry powder and fry for one more minute stirring constantly
  • Add chicken broth; boil and simmer for 10 mins
  • Blend corn starch, rest of ginger, lime jiuce in a small bowl and stir into mixture
  • Continue cooking till mixture thickens and bubbles (approx. 1 min)
  • Stir in tomato wedges and chopped capsicums and simmer 3 mins longer
  • Garnish with coriander and serve with hot rice
