Ingredients

  • 2 cups - all - purpose flour
  • 1/2 cup - Orange juice
  • 1 tbsp - Orange zest
  • 2 tbsp - baking powder
  • 2 - eggs, beaten
  • 100 g - butter, room temperature
  • 1/4 cup - Honey
  • 1/2 cup - Sugar
  • 1 cup - Raspberry chunks

How to Make Raspberry and Orange Muffins

  • Preheat the oven to 350F, grease a muffins mould.
  • Sift the flour and baking powder in a large bowl and stir sugar, make a well in the centre.
  • Combine the egg, honey and butter in a another bowl and beat until they turn soft and creamy.
  • Pour the egg mixture, orange zest, orange juice to the flour and stir quickly, do not overmix.
  • Gently fold the raspberries and pour the mixture in the greased muffins mould and bake for 20-25 minutes, until the muffins turns golden.
  • Serve warm
