Ingredients

  • 4 eggs
  • 1.5 cups - flour
  • 1.5 tsp + 1 pinch - baking powder
  • 1.5 cups - castor sugar
  • 1.5 cups - butter
  • 4-5 tbsp - grated coconut
  • 1 tbsp - lime juice
  • 1 tbsp - vanilla essence
  • 4-5 tbsp - raspberry jam

How to Make Raspberry Coconut Cake

  • Preheat oven at 180 degree C. Sieve the flour along with baking powder and keep aside.
  • Cream butter and sugar in a bowl.
  • Add egg one at a time, followed by the lime juice, vanilla and flour mixture.
  • The batter will be thick and not runny.
  • In a greased tray, sprinkle some coconut and pour the batter.
  • Drop half of the jam over the batter and sprinkle the remaining coconut.
  • Bake in the preheated oven for 40 minutes or till a toothpick inserted in the centre comes out clean.
  • Let it stand for 10 minutes.
  • Brush the remaining jam over the cake and serve.
