Ingredients

  • 500 g - rava
  • 500 g - Sugar
  • 250 g - Ghee
  • 25 g - each of blanched and sliced Almonds and Pistachios
  • 25 g - chopped Cashewnuts
  • 1 tsp - Cardamom powder
  • a few drops essence of Saffron
  • a few drops each of orange, red and green food colouring
  • silver foil
  • How to Make Rava Barfi:

    1. Put 2 cups water in sugar and prepare a syrup of one-third consistency.
    2. Remove from fire and keep it warm.
    3. Heat ghee and fry the rava to a nice cream colour, put in the nuts, syrup and cardamom and keep on stirring till the mixture turns thick and leaves the sides of the vessel.
    4. Remove from fire and stir in essence.
    5. Divide the mixture into 3 equal portions.
    6. Colour one a nice orange red, the other green and leave the third portion white.
    7. Now take a greased thali and put in it orange mixture, level the surface and over it pour white and over this put the green.
    8. Level the surface and cover with foil.
    9. Set aside to turn cold, then cut into any shape you like.
