Ingredients

  • 1.5 cup - red beans
  • Water - 1 cup
  • Dried or fresh Orange peels - 2 rinds
  • 1/2 cup - rock Sugar
  • Pandan leaves - 2
  • 1 cup - lotus seeds

How to Make Red Bean Soup

  • In a big pot, boil the water, add red beans, stirring occasionally
  • When beans are cooked, add lotus seeds and orange peels.
  • Once lotus seeds are cooked, toss in rock sugar and pandan. Discard orange peels.
  • Let cool for 3 minutes, then serve in individual bowls.
