  • 2 cups - Coconut Milk (freshly made, or canned)
  • 1 cup - red lentils, washed until water runs clear
  • 1 - onions, finely chopped
  • 2-3 Cloves - Garlic
  • 1 inch piece - Lemon grass, chopped into thin slices
  • 1 tsp - cumin coriander powder
  • 1 tsp - paprika (or as per taste)
  • 1 - Lemon
  • 3 - scallions
  • Salt and pepper to taste
  • Few sprigs of Cilantro for garnish

How to Make Red Lentil and Coconut Soup

  • In a saucepan, in 1/2 tsp oil, saute onions, garlic and lemon grass until soft.
  • Add the lentils along with all the spices. Add the coconut milk, 2 cups water (add more to suit your consistency) bring to a boil and then simmer covered until soft and mushy
  • Add the juice of lemon, scallions, salt, pepper.
  • Serve warm garnished with scallions, paprika and cilantro.
