Ingredients

  • 3 big juicy Carrots
  • 1 tsp - Lemon juice
  • 1/2cup - crushed ice
  • 2 tsp - Sugar
  • 1/4tsp - salt
  • Mint powder to taste
  • pepper powder to taste
  • tender sprigs of fresh Mint to garnish

How to Make Refreshing Carrot Juice

  • Steam carrots in a double boiler for 4-5 minutes.
  • Cool and chill till required for juice.
  • Chop carrots roughly, put into an electric mixer.
  • Add salt, sugar, grind to a smooth paste.
  • Add 400 ml. chilled water, run again till frothy.
  • Strain through a fine mesh, discarding residue.
  • Put crushed ice in 3 tall slender glasses.
  • Pour juice into them, forming a froth.
  • Sprinkle mint and pepper powder lightly.
  • Place a small mint leaf couplet for garnish on top.
  • Serve immediately.
