Ingredients

  • 3 big juicy Carrots
  • 1 tsp - Lemon juice
  • 1/2cup - crushed ice
  • 2 tsp - Sugar
  • 1/4tsp - salt
  • Mint powder to taste
  • pepper powder to taste
  • tender sprigs of fresh Mint to garnish
  • How to Make Refreshing Carrot Juice:

    1. Steam carrots in a double boiler for 4-5 minutes.
    2. Cool and chill till required for juice.
    3. Chop carrots roughly, put into an electric mixer.
    4. Add salt, sugar, grind to a smooth paste.
    5. Add 400 ml. chilled water, run again till frothy.
    6. Strain through a fine mesh, discarding residue.
    7. Put crushed ice in 3 tall slender glasses.
    8. Pour juice into them, forming a froth.
    9. Sprinkle mint and pepper powder lightly.
    10. Place a small mint leaf couplet for garnish on top.
    11. Serve immediately.
