  • 1 - big round brinjal
  • 400 g - fresh curd
  • Refined oil - 1/4 cup
  • 1/2 tsp - grounded roasted cumin powder, or fresh cumin
  • A pinch - cumin
  • A pinch - rai
  • A pinch - fenugreek
  • A pinch - sesame seeds
  • 1 tbsp - sugar
  • Salt to taste
  • Red chilli powder
  • Turmeric - 1/4 tsp

How to Make Refreshing Dahi Baingan

  • Slice the brinjal and and cut the slices in half
  • Coat the pieces with turmeric
  • Deep fry the slices, drain and keep aside
  • Take the curd in a separate vessel
  • Heat til, add cumin, mustard, fenugreek and sesame seeds in oil and slightly fry them
  • As soon as the cumin turns pinkish, pour the oil and these spices into the curd
  • Add sugar and mix well to dissolve
  • Sprinkle dry-roasted cumin powder
  • If using fresh cumin, roast slightly and crush
  • Mix well, and sprinkle red mirch to taste and add salt
  • Now place the brinjal pieces in the curd mixture
  • Serve chilled
