Ingredients

  • 1 - big round Brinjal
  • 400 g - fresh Curd
  • Refined oil - 1/4 cup
  • 1/2 tsp - grounded roasted cumin powder, or fresh cumin
  • A pinch - cumin
  • A pinch - rai
  • A pinch - Fenugreek
  • A pinch - sesame seeds
  • 1 tbsp - Sugar
  • Salt to taste
  • Red Chilli powder
  • Turmeric - 1/4 tsp
  • How to Make Refreshing Dahi Baingan:

    1. Slice the brinjal and and cut the slices in half
    2. Coat the pieces with turmeric
    3. Deep fry the slices, drain and keep aside
    4. Take the curd in a separate vessel
    5. Heat til, add cumin, mustard, fenugreek and sesame seeds in oil and slightly fry them
    6. As soon as the cumin turns pinkish, pour the oil and these spices into the curd
    7. Add sugar and mix well to dissolve
    8. Sprinkle dry-roasted cumin powder
    9. If using fresh cumin, roast slightly and crush
    10. Mix well, and sprinkle red mirch to taste and add salt
    11. Now place the brinjal pieces in the curd mixture
    12. Serve chilled
