  • 1 cup - dried black beans
  • 1 tbsp - canola (or other vegetable oil)
  • 1 - medium Onion (finely diced)
  • 4 large Cloves - Garlic (minced)
  • 2 tsp - chipotle chillies in adobo sauce
  • 2 cups - water (or the bean-cooking liquid)
  • Salt to taste
  • How to Make Refried Beans With Chipotle Chillies:

    1. Soak dried black beans for a few hours and then cook until tender enough to mash. Or substitute with about 2 cups of washed and drained canned beans.
    2. Heat the oil in a saucepan. Add onions and cook, stirring, over medium-high heat until golden brown, for about 8-10 minutes.
    3. Add minced garlic and stir for another minute.
    4. Add finely chopped chipotle chillies and stir. Then quickly add the beans.
    5. Use the back of your ladle, or a potato masher, to mash the beans.
    6. Add the water or liquid, bring to a boil and allow the beans to simmer away for another 10-15 minutes until the liquid has reduced.
    7. Retain some moisture in the beans as they thicken upon standing.
