How to Make Refrigerated Mangoes

  • Choose fully ripe mango but not overripe or even slightly spoiled alphonso mangoes.
  • Peel and cut into large slices with a clean stainless steel knife.
  • Discard the stones.
  • Sprinkle some castor sugar at the base of a freezer container.
  • You may use freezerproof plastic see-through containers for convenience.
  • Make sure the lids are airtight.
  • Pile about 2 inches of mango slices.
  • Sprinkle some more sugar.
  • Repeat till container is full or mangoes are exhausted.
  • Top with a final layer of castor sugar.
  • Pack down tightly with a flat spoon.
