Ingredients

  • 1 kg - Beef steak
  • 1/2 tsp - Pepper corns
  • 1 tsp- Freshly ground black pepper
  • 2 tbsp - Thyme leaves, minced
  • 2 tbsp - Cooking oil.

How to Make Ren's Pan-Broiled Steak:

  • Pat the steak dry and coat one side with half the pepper and half the thyme and pat all the seasonings into the meat.
  • Now coat a plate with 1 tbsp of the oil and place the steak, seasoned side down, on it. Then pat the remaining pepper and thyme on the other side.
  • Coat it lightly with the remaining oil.
  • Now set it aside for 30 minutes.
  • Meanwhile, use a paper towel to lightly coat the surface of a ridged or plain cast-iron skillet with oil.
  • Heat the pan until the oil coating begins to smoke. Then place the steak in it and cook until its seared and nicely browned on one side, for about 5 minutes.
  • Now turn the steak and cook the other side for 5 minutes for rare or 6 minutes for medium.
  • Then transfer the steak onto a cutting board and let it rest for five minutes.
  • Carve the steak into one half inch thick slices and serve.
