Ingredients

  • 1 - carrot
  • 1 - cucumber
  • 1 - green capsicum, finely sliced
  • 1 - red onion, thinly sliced
  • 5 to 6 - lettuce leaves
  • 1 - tomato, finely sliced circles
  • For dressing:
  • 1/2 cup - honey
  • 2 tbsp - white vinegar
  • 2 tbsp - lemon juice
  • To taste - salt
  • 1 tsp - crushed black pepper

How to Make Ribbon Salad

  • Using a vegetable peeler, slice carrots and cucumber lengthwise into very thin strips.
  • In a bowl, mix all ingredients for dressing and keep aside.
  • In a large bowl combine all vegetables.
  • Pour dressing over vegetables, toss and let it chill in refrigerator.
