Ingredients

  • Soaked Rice - 1 cup
  • Sugar - 1.5 cups
  • Grated Coconut - 1 cup
  • 5 - Elaichi
  • Cashews, for garnishing
  • 2 tsp - Ghee
  • How to Make Rice Coconut Souffle:

    1. Grind rice and grated coconut to a smooth paste by adding 2 cups of water and strain the 'milk'.
    2. Heat a heavy bottomed pan add coconut rice 'milk' and sugar stir continuously till a soft lump is formed.
    3. Lastly add ghee and elaichi powder.
    4. Pour the mixture into a greased tray.
    5. Cut into slices on cooling decorate with a kaju on each slice.
