Ingredients

  • 2 cups - leftover cooked Rice or pulao
  • 1 tbsp - Tomato sauce
  • 1 tsp - chilli sauce or 1/2 tsp crushed Red Chillies
  • 1/2 tsp - soya sauce
  • 1/2 tsp - Tabasco sauce
  • 2 tbsp - grated cheese
  • 2 tbsp - Cornflour
  • salt to taste
  • 1/2 cup - fine bread crumbs
  • oil to deep fry
  • How to Make Rice Croquettes:

    1. Mash leftover rice well.
    2. Warm it either in the cooker or microwave for ease before mashing.
    3. Add all other ingredients, except breadcrumbs and oil.
    4. Heat oil in a frying pan.
    5. Shape croquettes from mixture.
    6. Roll each croquette in breadcrumbs and let in to hot oil.
    7. Deep fry a few at a time, till golden and crisp.
    8. Serve hot with ketchup, chutney, etc.
