Ingredients

  • 180 g - Butter
  • 230 g - Sugar
  • 1/2 tsp - baking powder
  • 150 g - mixed fruit
  • 30 ml - Milk
  • 230 g - all purpose flour
  • 4 - eggs
  • 1/2 tsp - vanilla essence
  • 50 g - Almonds

How to Make Rich Fruit Cake

  • Blanch almonds and chop. Mix the fruit with the almonds.
  • Beat eggs with vanilla essence and set aside.
  • Cream butter and sugar and add the beaten eggs gradually.
  • Fold in half the flour and fruit mixture into the creamed mixture and mix thoroughly.
  • Fold in the remaining flour and fruits.
  • Add milk to get a good consistency.
  • Grease and flour an 8 inch baking tray and pour in the cake mixture.
  • You can add the remaining fruit and chopped almonds on top.
  • Bake at 350 degree Fahrenheit for about 40 minutes.
  • After this, switch off the oven and leave it inside for around 10 minutes.
  • Remove from the oven and place it on a wire rack to cool.
