  • 1 cup - Ridge gourd peels
  • 1 cup - Green spring onions
  • 4 - Dry red chillies
  • 1 - Tamarind (blueberry size)
  • 1 tbsp - Urad dal
  • 2 tbsp - Grated coconut
  • Oil
  • Salt
  • 1/2 tsp - Mustard seeds
  • A few curry leaves

How to Make Ridge Gourd and Spring Onion Chutney

  • Heat a few drops of oil and fry the dry red chillies, tamarind and urad dal until they turn golden brown.
  • In the same pan, saute the ridge gourd peels and green spring onions until they shrink a bit.
  • Grind the sauteed peels and spring onions along with the fried mixture, grated coconut, water and salt until they turn into a coarse paste.
