Ingredients

  • 1 cup - Ridge gourd peels
  • 2 tbsp - Sesame seeds
  • 2 - Dry red chillies
  • 5 - Garlic cloves
  • 1 inch piece - Ginger
  • 1 - Tamarind (marble size)
  • 2 tsp - Oil
  • For Tempering:
  • 1/4 tsp - Mustard seeds
  • 1/4 tsp - Urad dal
  • 2 - Curry leaves

How to Make Ridge Gourd Chutney

  • Wash thoroughly the ridge gourd peels and drain the excess water.
  • Heat 1 tsp of oil and fry the ginger, garlic, red chillies and tamarind until they turn brown.
  • Add the sesame seeds immediately, fry them until they change colour and keep aside.
  • Stir fry the ridge gourd peels in the same pan until they shrink a bit and let them cool.
  • Grind them a bit coarsely with enough salt.
  • Heat the remaining oil in a pan, add the mustard seeds, urad dal and curry leaves, let them splutter and add the tempering to the ground chutney.
