Ingredients

  • 2 - firm ripe pears, halved and cored
  • 4 tsp - Olive oil, divided
  • 2 tbsp - cider Vinegar
  • 1 tsp - water
  • 1 tsp - Honey
  • 1/8 tsp - white pepper
  • 1/4 cup - chopped toasted hazelnuts
  • 1/4 cup - dried Cranberries
  • 1/4 tsp - salt
  • How to Make Roasted Pear Salad:

    1. In a bowl, toss pears with 1 teaspoon oil.
    2. Place in a 15 in. x 10 in. x 1 in. baking pan coated with nonstick cooking spray.
    3. Bake at 400 degrees F for 10 minutes.
    4. Turn pears over; bake 5-7 minutes longer or until golden and tender.
    5. When cool enough to handle, peel pears.
    6. Thinly slice two pear halves lengthwise and set aside.
    7. Place remaining pear halves in a food processor or blender.
    8. Add the vinegar, water, honey, salt and white pepper; cover and process until smooth.
    9. While processing, slowly add remaining oil.
    10. In a large bowl, toss the salad greens, nuts and cranberries.
    11. Arrange pear slices on top; drizzle with dressing.
