  • 20 Almonds
  • 1.5 cups - water
  • 1 cup - Milk
  • 5 peppercorns
  • 2 tsps - Sunflower seeds
  • Sugar to taste
  • rose water or essence to flavour
  • How to Make Rose Flavoured Thandai:

    1. Blanch the almonds and put into electric blender with peppercorns, seeds and half the water.
    2. Blend at high speed until finely ground and strain into a jug through a fine clean muslin bag.
    3. Return the ground mixture left in the cloth to the blender with remaining water, blend again and once more extract the liquid.
    4. The finely ground almond residue may be refrigerated or frozen and used for thickening curries.
    5. Mix milk with the almond liquid, add sugar to taste and rose water or essence to flavour.
    6. Add crushed ice, or keep refrigerated until served.
    7. A pretty touch is to float a few small rose petals on top of the drink.
