How to Make Rose Flavoured Thandai

  • Blanch the almonds and put into electric blender with peppercorns, seeds and half the water.
  • Blend at high speed until finely ground and strain into a jug through a fine clean muslin bag.
  • Return the ground mixture left in the cloth to the blender with remaining water, blend again and once more extract the liquid.
  • The finely ground almond residue may be refrigerated or frozen and used for thickening curries.
  • Mix milk with the almond liquid, add sugar to taste and rose water or essence to flavour.
  • Add crushed ice, or keep refrigerated until served.
  • A pretty touch is to float a few small rose petals on top of the drink.
