Ingredients

  • 1 cup - mixed vegetables (include broccoli, asparagus, celery)
  • 1 - large red Onion (finely chopped)
  • 1/2 bunch - Cilantro
  • 3 - Tomatoes or 1/4 cup Tomato puree
  • For masala powder:
  • 2 tsp Coconut
  • 1 tsp- Poppy Seeds
  • 2 - 3 - Garlic Cloves
  • 1 inch - Ginger
  • 5 - Red Chillies
  • 1/2 inch - Cinnamon stick
  • 4 - peppercorns
  • 1/5 tsp - Dhania seeds
  • 4 - Cloves
  • A little Mace and Nutmeg
  • How to Make Sabzi Masaledar:

    1. Dry roast ingredients for the masala and powder.
    2. Cook the vegetables.
    3. Heat oil and temper with jeera and slit green chillies.
    4. Add onion and fry till brown.
    5. Add masala powder. Fry for 30 seconds.
    6. Add tomatoes or the puree.
    7. Add salt and cook till oil floats to the top (about 10 - 15 minutes).
    8. Add cooked vegetables and simmer for 10 minutes.
    9. To make the gravy creamy, add 1/2 cup of milk.
    10. Garnish with cilantro leaves and serve piping hot with phulkas, puris or rice.
