How to Make Sabzi Masaledar

  • Dry roast ingredients for the masala and powder.
  • Cook the vegetables.
  • Heat oil and temper with jeera and slit green chillies.
  • Add onion and fry till brown.
  • Add masala powder. Fry for 30 seconds.
  • Add tomatoes or the puree.
  • Add salt and cook till oil floats to the top (about 10 - 15 minutes).
  • Add cooked vegetables and simmer for 10 minutes.
  • To make the gravy creamy, add 1/2 cup of milk.
  • Garnish with cilantro leaves and serve piping hot with phulkas, puris or rice.
