Ingredients

  • 1/2 cup - basmati rice (soaked for 30 mins)
  • 220 ml - vegetable or chicken broth
  • Walnuts - a few, soak for 30 mins
  • 1/4 tsp - good quality saffron
  • 1- big strand of mace
  • 1/2 tsp - pepper corn
  • 4 - green cardamoms
  • Salt to taste
  • 1 tbsp - olive oil
  • 1 tbsp - lemon juice
  • 2 - long green chillies
  • 2 - boiled eggs
  • A pinch - crushed pepper.

How to Make Saffron rice with walnuts

  • Add mace, pepper, cardamom, crushed saffron and salt to broth and boil
  • Add soaked rice and walnuts, mix and cook
  • Add lemon juice, mix well.
  • When there is almost no water left, cover and cook till fully done
  • Heat olive oil in a pan, fry the eggs and chillies for 1 to 2 mins, add crushed pepper
  • Transfer the rice to the pan, saute on a high flame for 1 min
