Ingredients

  • 1/2 cup - basmati Rice (soaked for 30 mins)
  • 220 ml - vegetable or Chicken broth
  • Walnuts - a few, soak for 30 mins
  • 1/4 tsp - good quality Saffron
  • 1- big strand of Mace
  • 1/2 tsp - pepper Corn
  • 4 - green Cardamoms
  • Salt to taste
  • 1 tbsp - Olive oil
  • 1 tbsp - Lemon juice
  • 2 - long Green chillies
  • 2 - boiled eggs
  • A pinch - crushed pepper.
  • How to Make Saffron rice with walnuts:

    1. Add mace, pepper, cardamom, crushed saffron and salt to broth and boil
    2. Add soaked rice and walnuts, mix and cook
    3. Add lemon juice, mix well.
    4. When there is almost no water left, cover and cook till fully done
    5. Heat olive oil in a pan, fry the eggs and chillies for 1 to 2 mins, add crushed pepper
    6. Transfer the rice to the pan, saute on a high flame for 1 min
