Chicken - 1 kg
Green Peas - 75 g
Carrots - 2 (Medium)
Potatoes - 4 (Large)
Eggs - 4
Lettuce - 1 leaf per person
Mayonnaise - 1 cup
Salt to taste
How to Make Salpicon
Cut chicken into large pieces, add salt and put to boil in a large pan of water.
When cooked well, remove pieces from pan, shred and place in a large bowl.
Boil the potatoes whole, with their peels on, till soft.
Dice into tiny cubes, add to shredded chicken, sprinkle a pinch of salt and leave.
Cook the green peas in 1 glass of water.
Chop carrots into small cubes and add when green peas are almost cooked with a pinch or two of salt.
When cooked, add to chicken and potato.
Boil the eggs, chop and add to the chicken mixture.
Pour mayonnaise on to everything.
Place a leaf of lettuce on a plate and serve chicken mixture.
Can be served hot or cold.
