  • 300 gram - jambal roti or other salted fish, cleaned
  • 375 ml - thin Coconut Milk
  • vegetable oil
  • 100 gms - red chilies, finely sliced diagonally
  • 2 Bay Leaves
  • 2 cm - fresh galangal(lengkuas)
  • 1 tomato, sliced
  • a pinch Sugar
  • Spices:
  • 8 Shallots
  • 2 Cloves Garlic
  • 1/2 cm fresh kencur
  • How to Make Salted Fish Curry:

    1. Roast the ikan jambal until the fishy smell is gone.
    2. Rinse in water and slice in 4 x 4 cm squares.
    3. Fry the chilies and spice-paste until fragrant.
    4. Add the salam leaves and the lengkuas.
    5. Continue frying for a minute or more.
    6. Add the coconut milk and fish.
    7. Bring a boil and continue simmering until coconut milk thickens.
    8. Add the tomato slices and the sugar.
    9. Continue cooking until tomato slices have gone limp.
    10. Remove and serve.
    11. Make 4-6 servings with other dishes.
