Ingredients

  • 2 cups - tuvar dal
  • 1 - big onion
  • 1 - big tomato
  • tamarind - small lemon - sized ball
  • Mixed vegetables - drumstick, brinjal, carrot, potatoes or ladies finger or raw mango
  • 2 tsp - chilli powder
  • 5 to 6 tsp - sambhar powder
  • 1 tsp - dhania powder
  • 1/4 tsp - turmeric powder
  • 1/2 tsp - nutmeg powder
  • 1/2 tsp - mustard seeds
  • 1/2 tsp - cumin seeds
  • 2 to 4 - dry red chillies
  • 1 sprig - curry leaves
  • 2 tbsp - coriander leaves, finely chopped
  • ghee
  • oil
  • salt to taste

How to Make Sambhar

  • Cook the tuvar dal with twice the amount of water, a little salt, a pinch of turmeric and 1 tsp ghee.
  • Soak the tamarind in a little water and extract the juice.
  • In a pan, heat the oil, add finely chopped onions and fry.
  • Add finely - chopped tomatoes and fry till they are tender and little mushy.
  • Then add the vegetables according to their coking time.
  • When you feel the vegetables are cooked, then add the sambhar powder, chilli powder, dhania powder, turmeric powder, salt and fry for a while.
  • Now add the cooked tuvar dal with a little water (according to the consistency you want for your sambhar).
  • Cook for 4 - 5 mins and then add the tamarind extract.
  • Bring to a boil.
  • Now, in a separate pan, add a little ghee and splutter mustard, cumin, red chillies and curry leaves. Add to the sambhar.
  • Finally, add the chopped coriander leaves.
