Ingredients

  • 2 cups - basmati rice
  • 1 - whole baby chicken, cut into bite size pieces
  • 1 tsp - pepper powder
  • 2 tsp - Saudi kabsa spice mix
  • 1 - onion, sliced (optional)
  • mixed fruit and nuts like cashew, almonds, sultanas or raisins
  • Salt - as required
  • 2 tbsp - olive oil or ghee
  • For kabsa spice mix:
  • Turmeric
  • Red chilli
  • Whole black peppercorns
  • Ginger(use powder or fresh)
  • Whole cloves
  • Black cardamom pods
  • Coriander seeds

How to Make Saudi Kabsa

  • Wash the chicken well and cut into pieces.
  • Rub the chicken pieces in salt and pepper.
  • Heat the oil in a pan, fry the nuts, fruits and set aside.
  • Then fry the sliced onions and set it aside.
  • Now fry the chicken pieces in same oil.
  • Once they slightly brown on each side, add the kabsa spice mix and mix well.
  • Add some water and cover the pan.
  • Keep the heat in medium and cook, till the chicken gets cooked.
  • Once the chicken is completely cooked, add the washed rice, 4 cups of water and salt to taste.
  • Cover the pan, cook in medium heat, until the rice is cooked.
  • When serving the rice, sprinkle the nuts and fried onions on top.
  • Serve the rice warm, with yogurt and salad.
