Ingredients

  • 250 gm - brinjal
  • 30 gms - coriander seeds
  • 25 gms - groundnut seeds
  • 15 gms - sesame seeds
  • some curry leaves
  • 1 tsp - turmeric
  • salt to taste
  • Oil for frying brinjals
  • 2-3 gms - asafoetida (or depending on the liking)
  • red chilli powder, according to taste
  • 1 tsp - mustard and cumin seeds for seasoning

How to Make Sauteed Baingan Masala

  • Roast coriander seeds, ground nut seeds and sesame seeds separately and powder them in a mixer separately.
  • Mix the three powders together in a bowl or plate and keep it aside.
  • Cut the brinjal in a required shape and size.
  • Heat oil in a pan and add mustard seeds and cumin seeds and the asafoetida powder.
  • Once the mustard splutters, add turmeric powder, curry leaves and cut brinjals, salt and mix thoroughly.
  • Allow it to cook for 10-15 minutes.
  • See that the oil forms a layer to the sides of the pan.
  • Once brinjals are cooked, add the powder of coriander, groundnut and sesame seeds and mix it evenly to spread to all the brinjals.
  • It is rich in protein and can be had with rice or chapatis.
