  • 8 eggs beaten
  • 1/2 kg - red tomatoes, chopped
  • 3 tbsp - Olive oil
  • 1/2 kg - Onions
  • 250g - capsicum, sliced fine
  • Salt to taste
  • 1 tbsp - Butter
  • A pinch of Thyme
  • 1 bunch parsley, chopped
  • 8 black olives, chopped
  • How to Make Savona Scramble:

    1. Melt the oil and butter together in a heavy pan.
    2. Add the onions and fry them till tender, but not brown.
    3. Add the capsicum and olives and cook for 5 mins.
    4. Then add the tomatoes, parsley, thyme and salt to taste.
    5. Cover and cook on low heat till the mixture is thick.
    6. Now add the eggs, stirring constantly with a wooden spoon till they are creamy and slightly thickened without being over-done.
    7. Serve immediately with buttered toast.
