Ingredients

  • 8 - Eggs, separated
  • 1/2 cup - Capsicum, finely chopped (discard seeds)
  • 1/2 cup - Spring onion, chopped
  • 1/2 cup - Tomato, finely chopped
  • 1 tsp - Ginger, minced
  • 2 tsp - green chillies, minced
  • salt and pepper to taste
  • 3 tsp - Oil

How to Make Scrambled Eggs

  • Mix all the egg whites with 4 yolks. Beat lightly
  • Add salt and pepper to it.
  • Heat the oil in a pan, saute the ginger, green chillies and capsicum for 2-3 mins.
  • Now add the spring onion and saute for another minute.
  • Add the tomatoes and cook until they soften.
  • To this add the eggs.
  • Stir till the eggs are set into soft scramble.
