  • 200 g - semolina or soogi
  • 1 cup - Milk
  • 200 g - Butter or Margarine
  • 200 g - Sugar powdered
  • 4 - eggs, beaten well
  • 1/2 tsp - baking powder
  • 200 g - desiccated Coconut
  • 1 tsp - vanilla essence
  • 1/2 tsp - salt
  • 100 g - Raisins
  • How to Make Semolina, Coconut And Raisin Cake:

    1. Roast the semolina with a little ghee or butter.
    2. For about 8-10 minutes on low heat till it gives out a nice aroma.
    3. Cream the butter/ margarine and sugar well.
    4. Add the eggs, desiccated coconut, salt, vanilla essence and mix well.
    5. Slowly add the roasted semolina, and fold in the mixture to form a smooth slightly thick consistency without any lumps.
    6. Mix in the raisins.
    7. Add a little milk if the mixture is too thick.
    8. Pour into a greased, papered baking dish or cake tin and bake in a moderate oven for about one hour or till the cake is done.
    9. Cool and remove from the tin.
