Ingredients

  • Basmati Rice - 2 cups
  • Vegetable/Chicken stock - 4 cups
  • White sesame seeds - 2 tbsp
  • Oil - 4 tbsp
  • Spring onions - 10-12, chopped
  • Yellow or red Capsicums - 2, de-seeded and sliced
  • Raw Mango - 1, diced
  • Raisins - 1/2 cup
  • salt to taste

How to Make Sesame Seeds and Mango rice

  • Soak washed rice in vegetable/chicken stock with salt for 15 mins.
  • Cook the rice on a low flame till the stock dries up.
  • Heat oil in a pan and roast the sesame seeds till they splutter.
  • Transfer the seasoning into a bowl and reserve.
  • Now, lightly saute the spring onion and capsicum.
  • Gently mix the sauteed vegetables, mango pieces and the sesame seeds to the rice and serve hot.
