Ingredients

  • For set dosa:
  • 1 cup - raw rice
  • 1/2 cup - parboiled rice
  • 1/4 cup - urad dhal
  • 1/4 cup -poha
  • 2 tsp - fenugreek
  • 2 tsp - channa dhal
  • 1 tsp - thoor dhal
  • 1/4 tsp - turmeric powder (optional)
  • 1 tsp - sugar (optional)
  • Salt
  • For vada curry:
  • Channa Dhal - 1/2 Cup
  • Thoor Dhal - 1/2 Cup
  • Red Chilly - 2
  • Onion - 1 (Finely Chopped)
  • Tomato - 4 (Finely Chopped)
  • Saunf - 1/2 tsp
  • Bay leaf - 1
  • Ginger-garlic paste - 1/2 tsp
  • Chilli Powder - 1.5 tsp
  • Garam Masala - 1 tsp
  • Oil
  • Salt
  • Coriander - a little

How to Make Set Dosa Vada Curry

  • Soak rice, urad dhal, poha, fenugreek, channa dhal and thoor dhal together for 3 hours.
  • Then, grind and then mix salt and sugar.
  • Allow the batter to ferment for at least 8 hours.
  • Just before making dosa, add the turmeric powder.
  • Make spongy dosa.
  • Serve hot with vada curry.
  • For vada curry:
  • Soak both the dhal along with red chill for 1 hour.
  • Drain water and then grind.
  • Heat oil in a pan and make crispy vadas.
  • Now, in another pan add oil. Then, add saunf, ginger-garlic paste and fry till raw smell goes.
  • Add bay leaf, chopped onion and tomatoes and fry well.
  • Add chilli powder, garam masala and salt. Mix well.
  • Cut vadas in to pieces and add them to the contents in the pan. Mix well.
  • Garnish with coriander and serve hot with set dosai.
