Ingredients

  • 2 cups - gheria
  • 3 - green chillies, finely chopped
  • 1 flake -garlic, grated
  • 2 tbsp - oil
  • 1 tbsp - sesame seeds
  • For Seasoning
  • 1 stalk - Curry leaves
  • 1 tbsp - coriander leaves, finely chopped
  • 1/2 tsp - Red Chilli powder
  • 1/4 tsp - Turmeric powder
  • 3 pinch - Asafoetida
  • 1/2 tsp - Cuminutes and mustard seeds, mixed
  • 4 drops - Lemon juice
  • salt to taste.
  • 1 tbsp - oil
  • How to Make Sev from Leftover Gheria:

    1. Heat leftover gheria in microwave or steam till soft.
    2. Mix in chillies, garlic, sesame seeds, oil.
    3. Put into a sev press with large chakli plate perforation.
    4. Press on to a clean plastic sheet.
    5. When done, place in direct sunlight, to dry.
    6. When chewy and dried, soak in cold water for 15 minutes.
    7. Heat oil in a pan and splutter cumin, mustard, asafoetida and curry leaves.
    8. Add red chilli saute and add 2 cups water.
    9. Add turmeric, lemon juice, salt if required and bring to a boil.
    10. Add sev, coriander, cover with a lid, simmer till sev is soft.
    11. The water will also become thicker and opaque.
    12. Serve.
