  • 2 - mangoes
  • 2 litres - milk
  • Powdered sugar - to taste
  • 1/4 cup - raisins
  • 1/4 cp - cashewnuts

How to Make Shahi Aam

  • Boil milk on low heat.
  • Add raisins and small pieces of cashewnuts.
  • Keep stirring for a long time so that the mixture thickens to form rabri.
  • Cool the mixture, add sugar powder as per taste and mix well.
  • Cut the mangoes from the centre along the entire curve of the fruit.
  • Place your knife inwards from the cut end, parallel and very close to the seed, and slowly turn the knife along the entire curvature of the mango to loosen the seed.
  • Repeat in the opposite direction to completely loosen the seed and remove it. Now you have two pieces of mangoes in the shape of cups with their centre portion hollow and the sides with pulp.
  • Fill the centre with the rabri and decorate with cashewnuts on top.
  • Refrigerate for at least 3 hours before serving.
