Ingredients

  • 600 gms - Cottage cheese
  • 2 cubes cheese (grated)
  • 4 bunches Spinach (finely chopped)
  • 8 medium sized Potatoes
  • 10 tbsp - Arrowroot powder
  • 10 to 12 Green chillies (finely chopped)
  • 3 tbsp - Coriander leaves (finely chopped)
  • 3 to 4 tsp - Red Chilli powder
  • 2 tsp - Mango powder
  • oil for deep frying
  • 1 pinch cooking soda
  • salt to taste
  • How to Make Shahi Gole:

    1. Cook the finely chopped spinach with a pinch of cooking soda, but without any water.
    2. When cool, squeeze out the water completely. Grind coarsely.
    3. Crumble the cottage cheese and mix well with the grated cheese, green chillies, coriander leaves, red chilli powder, mango powder and salt to taste and set aside.
    4. Boil the potatoes and mash while still hot.
    5. Add spinach, arrowroot powder, salt to the mashed potatoes and make dough for the golas.
    6. Take a portion of this dough and flatten it.
    7. Put 1 heaped tbsp of cottage cheese mixture in its center and seal the sides to form a ball.
    8. Deep fry the golas in hot oil.
    9. Serve immediately with green chutney or mint-curd dip.
