How to Make Shahi Gole

  • Cook the finely chopped spinach with a pinch of cooking soda, but without any water.
  • When cool, squeeze out the water completely. Grind coarsely.
  • Crumble the cottage cheese and mix well with the grated cheese, green chillies, coriander leaves, red chilli powder, mango powder and salt to taste and set aside.
  • Boil the potatoes and mash while still hot.
  • Add spinach, arrowroot powder, salt to the mashed potatoes and make dough for the golas.
  • Take a portion of this dough and flatten it.
  • Put 1 heaped tbsp of cottage cheese mixture in its center and seal the sides to form a ball.
  • Deep fry the golas in hot oil.
  • Serve immediately with green chutney or mint-curd dip.
