Ingredients

  • 8 large kidneys
  • 500 gms - Mutton
  • 2 tsp - ginger-garlic-green chilli paste
  • 1/2 tsp - Garam Masala powder
  • 1/2 tsp - Cumin seeds
  • 3 tomatoes, skinned and chopped
  • 250 gms - fresh coriander leaves, chopped
  • 2 cups - beaten Curd
  • 1/4 tsp - Saffron soaked in a cupful of hot Milk
  • 6 tsps - Ghee
  • How to Make Shahi Gurda Gosht:

    1. Skin, halve and cut each kidney into six pieces.
    2. Cut meat into small pieces.
    3. Marinate in ginger-garlic-green chilli paste.
    4. Now heat ghee and brown onions.
    5. Add garam masala, cumin seeds and salt.
    6. Then, add kidneys and meat and fry well.
    7. Lower heat and continue cooking for a while. Then add tomato, coriander, curd and saffron.
    8. Cover and cook for a few minutes. Uncover, stir a little warm water if need be.
    9. Continue cooking it on the medium fire till ghee begins to separate.
    10. Serve hot with chapattis or naan.
