Ingredients

  • 8 large kidneys
  • 500 gms - Mutton
  • 2 tsp - ginger-garlic-green chilli paste
  • 1/2 tsp - Garam Masala powder
  • 1/2 tsp - Cumin seeds
  • 3 tomatoes, skinned and chopped
  • 250 gms - fresh coriander leaves, chopped
  • 2 cups - beaten Curd
  • 1/4 tsp - Saffron soaked in a cupful of hot Milk
  • 6 tsps - Ghee

How to Make Shahi Gurda Gosht

  • Skin, halve and cut each kidney into six pieces.
  • Cut meat into small pieces.
  • Marinate in ginger-garlic-green chilli paste.
  • Now heat ghee and brown onions.
  • Add garam masala, cumin seeds and salt.
  • Then, add kidneys and meat and fry well.
  • Lower heat and continue cooking for a while. Then add tomato, coriander, curd and saffron.
  • Cover and cook for a few minutes. Uncover, stir a little warm water if need be.
  • Continue cooking it on the medium fire till ghee begins to separate.
  • Serve hot with chapattis or naan.
