Ingredients

  • 1 small packet - paneer (or as required )
  • 1 cup - cashew nuts
  • 1 cup - tomato puree
  • 1 cup - low fat milk
  • 1/2 cup - coriander leaves
  • 1/2 cup - mint leaves
  • 1 - onion, chopped
  • 2 inch piece - ginger, grated
  • 3 to 4 - cloves, chopped
  • 1 tbsp - poppy seeds
  • salt and chilli to taste (approximately 1 chilli)
  • 1 tbsp - sugar
  • 2 tsp - coriander and cumin powder
  • 2 tsp - garam masala
  • PAM (cooking oil) as required

How to Make Shahi Paneer in Minty Cashew Gravy

  • Soak poppy seeds and cashew nuts in milk for 15-30 minutes. Set aside.
  • Meanwhile take a microwave bowl. Spray PAM generously and then saute onions, chilli, ginger, salt and garlic for 2 minutes in microwave.
  • Stir it in the middle to avoid burning.
  • Once soft, grind it along with mint and coriander leaves till smooth.
  • Transfer to a bowl and then keep on microwave for another 1 minute.
  • Add all the spices and puree and saute for another 2 minutes.
  • Meanwhile, heat a non-stick pan and spray it generously with PAM.
  • Saute the paneer slices till browned.
  • Grind the cashew nuts and poppy seeds along with milk. It need not be smooth.
  • Now add this to the prepared gravy in the bowl.
  • Heat for another 2 minutes and then add the paneer to the gravy.
  • Heat for 1 minute.
  • Taste and season it if required.
  • It goes well with whole wheat garlic naan.
