Ingredients

  • Shallots1 – 200 grams
  • Tamarind2 – Lime size ball
  • Green Chillies – 3-4 nos
  • Fenugreek Seeds – 1/2 tsp
  • Mustard Seeds – 1/2 tsp
  • Curry Leaves – 1/2 cup
  • Turmeric Powder – 1/4 tsp
  • Jaggery – 1 tsp [optional]
  • Water – 1-2 cups
  • Salt to taste
  • Oil – 2 tsp

How to Make Shallots in Tamarind Sauce

  • Chop the shallots and chillies finely.
  • Soak tamarind in hot water for about 20 minutes, strain, discard seeds.
  • Heat oil in a non-stick pan, add mustard seeds and allow to pop.
  • Add fenugreek seeds, curry leaves and sauté for a few seconds.
  • Add shallots/onions, green chillies and sauté for 3 minutes.
  • Add turmeric powder, tamarind extract and boil for about 15 minutes.
  • Mix jaggery/sugar and serve with rice and yoghurt.
