Ingredients

  • Shallots1 – 200 grams
  • Tamarind2 – Lime size ball
  • Green chillies – 3-4 nos
  • Fenugreek Seeds – 1/2 tsp
  • Mustard Seeds – 1/2 tsp
  • Curry leaves – 1/2 cup
  • Turmeric powder – 1/4 tsp
  • Jaggery – 1 tsp [optional]
  • Water – 1-2 cups
  • Salt to taste
  • Oil – 2 tsp
  • How to Make Shallots in Tamarind Sauce:

    1. Chop the shallots and chillies finely.
    2. Soak tamarind in hot water for about 20 minutes, strain, discard seeds.
    3. Heat oil in a non-stick pan, add mustard seeds and allow to pop.
    4. Add fenugreek seeds, curry leaves and sauté for a few seconds.
    5. Add shallots/onions, green chillies and sauté for 3 minutes.
    6. Add turmeric powder, tamarind extract and boil for about 15 minutes.
    7. Mix jaggery/sugar and serve with rice and yoghurt.
