Ingredients

  • 8 - large prawns, cleaned, shelled and deveined
  • 1 - egg, beaten
  • 1 tsp - each of Sugar and Tomato ketchup
  • 1/2 cup - Chicken or Meat stock
  • 1 tsp - Corn flour blended with 2 tbsp water
  • a pinch - ajinomotto
  • 1 - Red Chilli
  • 1 - medium onions, minced
  • salt and pepper to taste
  • oil as required
  • How to Make Shanghai Prawns:

    1. Pound the chilli to a paste with little oil.
    2. Cut the prawns into 2 pieces lengthwise.
    3. Mix the prawns with egg, salt and pepper and deep fry each piece separately to a golden brown colour. Drain well.
    4. Heat 2 tbsp oil and fry the onions till transparent.
    5. Add chilli, sugar, tomato sauce, ajinomotto and salt.
    6. Mix well, then add prawns and stock.
    7. Cook over a low fire for 10 minutes.
    8. Add the corn flour mixture gradually, stirring all the time, until it boils.
    9. Serve immediately.
